Vegan "Egg" Salad Wrap

This vegan egg salad recipe is so simple, actually simpler than its actual egg version. Not only is this #plantbased, it is very versatile. It can be topped on toasted bread, rolled in wraps, had as is as a salad with some crunchy veggies. We alternate one of the above variations every week.


I usually batch make the fried tofu and then add the mayo and condiments as and when needed. So that I can use the tofu is so many other dishes also! For instance, stir-fries!


Also, I have made an avocado-mint dip/spread that I usually make and store in airtight containers in the fridge to grab as a snack alongside some crunchy veggies like cucumber, carrots or celery sticks.

Ingredients:

Egg-Salad

  • 1 Block Firm/Extra firm Tofu

  • ¼ tsp turmeric powder

  • ¼ tsp pepper powder

  • ¼ tsp Kala Namak

  • 1 tsp Lemon Juice

  • 2-3 tbsp Cilantro/dill, finely chopped

  • 2 tbsp Vegan Mayo

  • 1 tbsp Mustard

  • Salt per taste

Wrap

  • 4 LargeFlour Tortillas

  • 2cupsSpinach

  • 1cupShreddedLettuce

  • 1/2 cupRedOnions,Sliced

  • 1/2 cup Sweet Peppers, Julienned

  • 2Gherkins, finely chopped

  • SlicedPickled Jalapenos


Avocado Dip/Spread

  • 1 small ripe Avocado

  • ¼ cup Cilantro

  • 2 tbsp Mint Leaves

  • 1 tsp 3G Paste (Ginger, Garlic, Green Chili)

  • Salt to taste

  • 1 tsp Lemon Juice

  • 2 tbsp Non-dairy Yogurt/Silken Tofu


Directions:

Egg Salad:

  1. Cut 1 block tofu in half

  2. Roughly chop one half and crumble the other half. Chopped half resembles egg-whites and crumbled half resembles the yolk

  3. In a pan on medium heat, add 1 tbsp oil

  4. Add ¼ tsp Turmeric Powder

  5. Add the tofu and mix well

  6. Add salt per taste, ¼ tsp each of Black Salt and Black Pepper Powder

  7. Add 1 tsp Lemon Juice

  8. Cook the tofu until golden and remove in a bowl to cool

  9. Once cool, add the fresh herbs

  10. Add 2 heaping tbsp of vegan mayo

  11. Add 2 tsp of mustard sauce

  12. Mix well and keep aside

Avocado Dip/Spread:

  1. In a blender jar, add the ingredients and blend to a smooth thick paste – Mayo like consistency

Wrap:

  1. On a flour tortilla, smear the avocado spread

  2. Add the greens – I used Spinach and lettuce

  3. Now add the crunchy veggies of choice – I used peppers, onions and pickles

  4. Roll it into a tight burrito

  5. Grill on a pan/foreman grill – Optional but recommended
