Vegetable Coins in Manchurian Sauce/ Veg. Manchurian

Vegetable coins or balls in Manchurian sauce is one of the best Indian Chinese dishes you can enjoy. This is my take to make it healthy so my family can have it guilt-free whenever wherever!


I usually use my food processor to chop my veggies really fine. You could use any chopper or even grate them or grind them but be sure to squeeze out some water else you'll need more flour.


Also, only add the coins/balls to the gravy minutes before serving. If you made the balls ahead of time, bake/air fry them again for around 5-7 minutes prior to serving to ensure they are crisp.


This recipe if made dry, can be used in frankies (Indian style wraps).

Ingredients:

Manchurian Balls

  • 2 cups Cabbage, finely chopped

  • 1 cup Mixed Bell Peppers, finely chopped

  • 1 cup Carrot, finely chopped

  • 5-6 tbsp Cornstarch

  • 4-5 tbsp All-purpose Flour

  • Salt as per taste

  • ¼ tsp Black Pepper Powder

Sauce

  • 4 tbsp Soy Sauce

  • 1 tbsp Sriracha Hot Sauce (alternatively, Asian style Hot Sauce)

  • 2 tbsp Tomato Ketchup

  • ½ tsp Rice Vinegar

  • Water as needed

Gravy

  • 2 tbsp Green Onion whites

  • 2 tbsp Red Onions, finely chopped

  • 1 tsp Garlic, finely chopped

  • 1 tsp Ginger, finely chopped

  • 2 Green Chilies, finely chopped

Thickening Agent

  • 1tbsp Cornstarch

  • 2tbspWater


Directions:

Egg Salad:

  1. To a mixing bowl, add the chopped veggies, corn flour & all-purpose flour

  2. Season with Salt and pepper

  3. Once ball mixture is ready, form into ball/ small patties (roughly 2” diameter) & bake/ shallow fry/ air fry until golden brown

  4. Once baked/ fried, allow the balls to cool on a wire rack


Sauce/Gravy

  1. To a small mixing bowl, add the Soy Sauce, Rice Vinegar, Sriracha Hot Sauce & Tomato Ketchup – mix until well combined – set aside until required

  2. Heat a pan on medium heat & add Oil to the pan once heated

  3. Add the veggies (as listed under ‘Gravy’) to the pan & cook until par cooked (should retain some of its crunch)

  4. Once the veggies are cooked, add the sauce mix to the pan along with ¼ cup water

  5. Bring it all to a boil

  6. Create a corn flour slurry by adding a 1 tbsp of corn flour to 2 tbsp water

  7. Stir in the slurry and adjust consistency

  8. Garnish with Onion greens

  9. Serve the Manchurian/Vegetable coins in Manchurian sauce alongside some fried rice or steamed rice or noodles
