Spicy Tofu Wrap

Crispy breaded tofu, crunchy lettuce & onions and juicy tomatoes wrapped with a spicy, tangy yet sweet sauce will surely satiate your hunger pangs. To me personally, it is a comfort food.
I was craving for a nice take out but the lock down has reduced my daily exercise routine to almost non existent and so I am like let's settle for something healthy. But there is no need to compromise with taste right? The protein from the tofu, fiber from homemade multigrain tortilla and freshness of the veggies, surely make this dish popular in my house. You can make the tofu patties ahead of time and store each one wrapped in parchment paper in an airtight container. On a lazy afternoon or after a late day at work, just bake or fry them and treat yourself just like me.

Ingredients:
½ block Firm/ Extra Tofu, sliced into ½” slabs
1 head Scallion/ Green Onions, thinly sliced
Breadcrumbs
½ cup Onion, thinly sliced
½ Tomato, thinly sliced
4-5 leaves Butter Lettuce/ Equivalent greens of your choosing
4 Tortillas (hyperlink)/ 4 Burger Buns, lightly toasted
2 tbsp All Purpose Flour
1 tbsp Corn Starch
Spices/ Seasoning:
Salt (To Taste)
Pepper (To Taste)
Smoked Paprika
Oregano
Onion Powder (Optional)
Garlic Powder (Optional)
Condiments:
Sriracha (or Asian Style Hot Sauce)
Ketchup
Soy Sauce/ Tarmari/ Liquid Aminos
Rice Wine Vinegar
Vegan Mayonnaise
Directions:
I. Breaded Tofu Patties:
▫ Marinade: Mix 1 tbsp of soy sauce and 1 tsp each of Rice Wine Vinegar, Sriracha, freshly cracked black pepper, smoked paprika, ketchup
▫ Marinate the tofu slabs in the marinade for at least 2 hours, preferably overnight
▫ Seasoned Flour Slurry: Mix 2 tbsp All Purpose Flour, 1 tbsp Corn Starch, 1 tsp Salt, 1tsp Oregano, and water
▫ Tofu Patties: Take the marinated tofu, dip them in a seasoned flour slurry and coat them with breadcrumbs
▫ Pan fry the Tofu Patties on a skillet with oil or bake them in an oven preheated to 400 deg F (~205 deg C) for about 30 minutes or until golden brown, flipping them halfway
II. Wrap/ Burger:
▫ Special Sauce: Mix 2 tbsp vegan mayonnaise, 1 tbsp ketchup, 2tsp Sriracha sauce, 1 tsp each of onion powder and garlic powder until combined
▫ Assembly: Coat a tortilla with special sauce, and place your vegetables & tofu patty on the tortilla – roll up your tortilla like a burrito & serve the wrap with some of the leftover Special Sauce or other condiments of your choosing – alternatively, create a burger replacing the tortilla with a bun
Tips & Tricks:
• Breaded Tofu Patties can be made ahead of time – wrap each patty in parchment paper & pan fry/ bake them before consumption to ensure they stay crisp
• Breaded Tofu Patties can be cut into strips/ cubes & served on salads
