Soy Tikki Burger

This vegan high-protein burger recipe hits all your cravings for that Indian style Aloo tikki Burger! Not only is it so comforting and but also easy to make-ahead-and-freeze. This makes for an easy go-to dinner during work days.


I usually batch make these burger patties and freeze them. Then use it in wraps, salads, burgers or munch on them as is for snack.




For condiments I use Mayo-free special sauce and for toppings choices are endless - tomatoes, jalapeños, onions, lettuce, avocado slices!! Basically whatever you crave.


Adding soy granules not only helps me get those proteins in my diet, it also adds dietary fibers and healthy fats.

Ingredients:

  • 1/3 cup Soy Granules

  • 1⁄2 cup Red Onion, diced

  • 1 tbsp Garlic, Minced

  • 1⁄2 cup Mixed Bell Peppers, diced q1⁄2 cup Carrots, diced

  • 1⁄4 cup Frozen Peas

  • 1⁄4 cup Frozen Corn kernels

  • 1 tsp Ginger – Green Chili Paste

  • 1⁄2 tsp Garam Masala

  • 1 tsp Lime Juice

  • 1⁄4 tsp Turmeric Powder

  • 1⁄2 Red Chili Powder

  • 2 tsp Coriander & Cumin Seed Powder

  • 1⁄4 cup Cilantro (Coriander), stems & leaves, finely chopped q1⁄2 cup Boiled & Mashed Potatoes

  • 1 tbsp Oil, for cooking

  • Salt, to taste

Wet Slurry – Dry Crumb Coat:

  • 1⁄4 cup All-purpose flour in 1/8 cup Water

  • Salt to taste

  • Breadcrumbs

Special Sauce

  • 1/4 cup coconut yogurt (Any Non-dairy Yogurt/Silken Tofu)

  • 1 tbsp Sriracha Sauce

  • 2 tbsp Ketchup

  • 1 tsp Mustard Sauce

Directions:


  1. Rehydrate 1/3 cup Soy Granules in boiling hot water for 15 mins

  2. In a pan on medium heat add a tbsp oil.

  3. Once hot, add the Onions, Peppers, Ginger Green Chili Paste, Garlic, Garam Masala, and other spices – turmeric, red chili and coriander & cumin seed powder & Salt to taste – Mix everything until well combined

  4. Add the Cilantro to the mixture – Mix everything until well combined

  5. Mash lightly with the back of the spatula – Mix until well combined

  6. Take the pan off the stove & let the mixture cool down

  7. Once cool, add the mashed potatoes

  8. Now use your hands to form burger patties – use the size of your burger buns as reference

  9. Coat the burger patties in the wet slurry and then roll them in breadcrumbs

  10. Cook your burger patties using 1 of the following methods: I. Shallow Fry II. Air Fry III. Bake

  11. Assemble the burger with your choice of toppings, condiments, seasonings on toasted buns – include a choice of side & a drink to make it a meal
