Red Bean Burger

This vegan high-protein burger recipe hits all your cravings for Mexican food the right way! It is so comforting and easy to make and so simple to make-and-freeze that it makes for an easy go-to dinner during work days.


I usually batch make these burger patties and freeze them. Then use it in wraps, salads, burgers or munch on them as is for snack.




For condiments I use Avocado mint dip and for toppings choices are endless - tomatoes, jalapeños, onions, lettuce, tortilla strips, avocado slices, mango salsa!! Basically whatever you crave.


This red bean burger is a nice shift from the traditional black bean burgers and I think red kidney beans are more smoother and softer than black beans. But by all means, if black beans is all you have, please replace red beans with equal proportion of black beans in the recipe

Ingredients:


  • ½ cup Red Beans, cooked

  • ¼ tsp Cumin Seeds

  • ½ cup Red Onion, diced

  • ¾ cup Mixed Bell Peppers, diced

  • 1 tsp Ginger – Green Chilli Paste

  • ½ tsp Cumin Powder

  • ½ tsp Garlic Powder

  • ½ tsp Oregano

  • 1 tsp Lime Juice

  • 1 tsp Veggie Bouillon Paste

  • ¼ cup Cilantro (Coriander), stems & leaves, finely chopped

  • 1 tbsp Oil, for cooking

  • Salt, to taste

Avocado Dip/Spread

  • 1 small ripe Avocado

  • ¼ cup Cilantro

  • 2 tbsp Mint Leaves

  • 1 tsp 3G Paste (Ginger, Garlic, Green Chili)

  • Salt to taste

  • 1 tsp Lemon Juice

  • 2 tbsp Non-dairy Yogurt/Silken Tofu


Directions:


Avocado Dip/Spread:

  1. In a blender jar, add the ingredients and blend to a smooth thick paste – Mayo like consistency

Wrap:

  1. To a pan on medium heat, add 1 tbsp Oil & ¼ tsp Cumin Seeds

  2. Once the Cumin Seeds start to splutter, add the Onions, Peppers, Ginger Green Chilli Paste, Cumin Powder, Oregano, Garlic Powder & Salt to taste – Mix everything until well combined

  3. Add the Bouillon Paste & Lime Juice – Mix everything until well combined

  4. Add the Cilantro to the mixture – Mix everything until well combined

  5. Add the cooked Red Beans & mash lightly with the back of the spatula – Mix until well combined

  6. Take the pan off the stove & let the mixture cool down

  7. Once cool, use your hands to form burger patties – use the size of your burger buns as reference

  8. Cook your burger patties using 1 of the following methods: Shallow fry, Air-fry or Bake

  9. Assemble the burger with your choice of toppings, condiments, seasonings on toasted buns – include a choice of side & a drink to make it a meal
