This easy recipe hits all your cravings for that street food. This makes for an easy go-to dinner during work days.
I usually batch make the potato fillings. Then use it in wraps, salads, parathas!
For condiments I use cilantro and mint chutney and for toppings - tomatoes, cucumber, onions, beet slices!!

Ingredients:
¼ tsp Cumin Seeds
1 tsp 3G (Ginger, Garlic, Green Chili) Paste
¼ tsp Tumeric Powder
¼ tsp Red Chili Powder
¼ tsp Garam Masala Powder
¼ cup Frozen Peas
2 cups boiled & mashed Potatoes
2-3 tbsp Cilantro
1 tsp Lemon Juice
Salt, to taste
Sliced/Diced Cucumbers
Sliced/Diced Tomatoes
Sliced/Diced Onions
Bhujia Sev (Optional)
Cheese (Optional)
Directions:
To a pan on medium heat, add Cooking Oil, Cumin Seeds & Mustard Seeds
Once the seeds start to splutter, add the Ginger, Garlic, Green Chili Paste,
Add the spices and a splash of water
Add the peas and the potatoes
Mix well and finish with chopped Cilantro and Lemon Juice
Remove the mixture in a wide bowl to cool
Open Sandwich:
Spread a layer of potato mixture on the bread slices
Cook the bread slices on a skillet, filling side down
Then flip and cook the bread side until golden brown
After removing on to a plate, spread some chutney and ketchup and top with diced veggies
Sprinkle some chat masala and sev on top
Closed Sandwich:
Spread some butter and chutney on a bread slice
Add a layer of potato mixture
Top with some sliced veggies
Close with another bread slice spread with some butter and chutney
Toast on a foreman grill/skillet
