Bread Pudla

Bread Pudla is a healthy version of bread pakora a deep-fried Indian snack. It also is a vegan version of bread omelette that is a savory French-toast.


We make this recipe very frequently for dinner or as a party appetizer. It is healthy and high protein since it is made with chickpea flour.



I like my bread pudlas like an open sandwich and without cheese. My husband prefers a cheese closed sandwich version with some kind of a spread. We sometimes spread some queso for him! He is fairly healthy and doesn't put on weight like I do!


For the vegetables I am using Cabbage, Peppers, Onions and Cilantro. One can also use tomatoes, celery, corn, and any herb of choice.

Ingredients:

Chickpea Slurry

  • 2 cups Chickpea Flour (Besan)

  • 1/3 cup Semolina (Rava)

  • Salt as per taste

  • ¼ tsp Pepper

  • ¼ tsp Turmeric Powder

  • 1/8 tsp Red Chili Powder

  • ½ tsp 2G Paste

  • 1 tsp Lemon Juice

  • About 2 cups water

Toppings

  • 1 cup Cabbage, finely chopped

  • 1 cup Red Onion, finely chopped

  • 1 cup Mixed Bell Peppers, finely chopped

  • 1 cup Carrot, finely chopped

  • 3 Green Chilis, finely chopped

  • ½ cup Fresh Cilantro (Coriander), stems & leaves, finely chopped, to discretion

  • Cheese (Dairy/ Non – Dairy), to discretion

  • Chaat Masala, to taste

Bread

  • Bread – 9-10 Slices of your favorite bread


Directions:


Chickpea Slurry

  1. To a mixing bowl, add all ingredients mentioned under “Chickpea Slurry” and add little water at a time to make lump-free runny consistency batter


Assembly

  1. Heat a pan on medium heat & add Oil to the pan once heated

  2. Coat the bread evenly in the Chickpea Slurry before transferring to the pan

  3. Add toppings of choice to the top of the bread being toasted in the pan – finish off with Chaat Masala (to taste)

  4. Flip the slide of bread to cook the other side. Press on the reverse side so as to make the veggies stick

  5. Once cooked on both side, sprinkle cheese to the side with the veggies & allow the cheese to melt

  6. Once the cheese has melted, take the Bread Pudla off the heat -

  7. Serve hot with condiments of choice
